
Gorgonzola toast with rosemary and pepper jelly and walnuts

📝 Ingredients (for 4 toasts)
4 slices of rustic or sourdough bread
100 g of gorgonzola cheese (sweet or spicy, according to your taste)
2 tablespoons of rosemary and pepper jelly
A handful of walnuts (lightly chopped)
A splash of extra virgin olive oil
Optional: a few fresh rosemary leaves for decoration
👩🍳 Preparation
Toast the bread:
Toast the slices in a pan, on a griddle, or in the oven until crispy on the outside but still tender on the inside. Drizzle with a little olive oil.
Add the gorgonzola:
Place chunks of gorgonzola on each slice while the bread is still warm, so the cheese melts slightly.
Add the jelly:
Using a teaspoon, spread a little rosemary and pepper jelly over the cheese. You don't need to cover the entire surface, just dab it lightly.
Add the nuts:
Sprinkle the chopped walnuts on top. You can lightly toast them first if you want to enhance the flavor.
Decoration and finishing touch:
Add a few fresh rosemary leaves if you have them, and a very fine drizzle of extra virgin olive oil on top.
